Rice Payas/ Payassam /Rice Kheer

1 large Cup Fine Rice( Approx 200 gms) 
1litre  Milk (you can also use 1liter Coconut milk )
150gm Sugar 
3cups water
Handful Raisins
10 Almonds slivered
10 Cashew nuts (halved)
10 Unsalted Pista slivered
8 cardamoms
4 turmeric leaves
a pinch of Saffron Strands(soaked in 1 tbsp milk)
11/2 tbsp Ghee


Step 1:Heat Milk and keep aside.

Step 2:Boil Rice with 3 cups of water and a tsp of salt.let the rice absorb all the water. 

(I use Basmati Rice for added flavor and cooked the rice in electric rice cooker with 1tsp pure ghee)

Step 3:Wash ,dry and sliver the Dry fruits , cut the turmeric leaves as shown in picture below ,wash and wipe clean.


Heat remaining Ghee

Roast Slivered Nuts separately with remaining ghee and keep aside

Step 4:In a deep bottomed pan ,add cooked rice,nuts,turmeric leaves(tie into a knot as shown in picture) and milk .

Cook an a low flame and after 5mins add sugar .Stir well and cook for some more time let it thicken. Once done add powdered cardamom(I powdered the cardamom with sugar on mixer.)

Step 5:Add the saffron strands soaked in milk lastly.Stir well and cook for a minute more.You can add more milk if you want thin consistency. Serve Hot or Cold .
